Racking up 10 different plant points, this tasty veggie and protein packed breakfast is the perfect healthy start to the day.
Eating vegetables for breakfast can set you off on the right eating path for the rest of day, helping you to make healthier choices.
This breaky give us a good portion of fibre and a variety of nutrients, fuelling and filling you up.
You can use any green veggies you like for this dish.
Ingredients
3 eggs
1/2 green pepper
1/2 courgette
1/2 leek
1/2 onion
Handful Kale
Handful Spinach
1 clove garlic
1 green Chilli
1 tsp Harissa spice blend
Salt to taste
1 tbsp Fresh herbs Parsley, Coriander
2 Spring onions
100g Feta
2 tbsps the Governor Evoo
Method
1. Finely chop all the veggies.
2. Heat 2 tbsps of olive oil in a medium size frying pan. Add the leeks, onion, chilli, garlic, and let soften for a couple of mins. Add the courgette, pepper, kale and harissa, stir and cook for a few more mins until softened then finally add the spinach. Add a splash of water if needed to wilt down.
3. Make 3 wells in the veggies and crack in your eggs. Cover and let cook until whites have firmed.
4. Crumble over the feta, add a sprinkle of chilli flakes, fresh herbs and a drizzle of the Governor EVOO.
