Whipped feta and apricot toast with walnuts and a honey, apricot drizzle

Ingredients

200g Feta ⁣
2 tbsps greek yoghurt ⁣
4 apricots, halved ⁣and stones removed
1/2 lemon, juiced⁣
1 tsp honey ⁣
A few walnuts, roughly chopped⁣
2 thick slices walnut bread
1-2 tbsp The Governor Extra Virgin Olive Oil ⁣

Method⁣


1. Crumble the feta into a small food processor. Add the yoghurt, lemon juice and 1 tbsp of EVOO. Whizz until smooth and creamy. Add more EVOO if needed. Set aside. ⁣
2. Heat the grill to medium. Place the apricots on the grill and cook for 12minutes until softened. ⁣
3. Scoop out the flesh of 1 apricot and place in a sieve. Using a spoon push the apricot through the sieve into a bowl, add the honey and a drizzle of oil and whisk together. ⁣
4. Toast your bread. Served topped with the whipped feta, apricots, walnuts and the apricot/honey sauce.
